from all over the world. Every sturgeon looks different and every sturgeon caviar tastes differently. Some sturgeon produces caviar quickly, and farmers extract the caviar too quickly. The result of this is usually soft or mushy caviar. Older fish produces larger and firm roe, if all farming steps have been observed, however this comes at a price.

How long does caviar stay fresh?
N°1 Caviar recommends it to be consumed within the first 3-4 days of receiving the product for optimal flavor and quality. Once opened, caviar is fresh anywhere from 5 to 7 days. An unopened tin of sturgeon caviar has a refrigerated shelf life of 4-6 weeks, while non-sturgeon caviar has a refrigerated shelf life of 2 weeks and a frozen shelf life of up to a year.
